Last week, I wrote about some energizing foods to get you through your busy workday day. This week, we wanted to share a couple healthy snack recipes that our team members enjoy!

Seaside Energy Balls

This recipe comes from Amy Walsh who has 3 kids that love these!

Snacks

Ingredients:

1/2 cup old-fashioned oats
1/2 cup all natural granola
1/2 cup creamy or crunchy peanut butter
1/2 cup pumpkin seed
1/2 cup of cranberry and walnuts
1/3 cup honey
1 teaspoon vanilla extract
1/2 cup dark chocolate chips

Snacks

 

To make, mix all the ingredients together, put it on a greased pan and bake for 10 minutes at 375 degrees. After that, let it cool for about 5 minutes. Then, take a spoonful of the mixture and roll it into balls and refrigerate for 30 minutes. Easy peasy!

 

 

Banana Breakfast Bars

This is my version of a recipe I found on Pinterest, which you can view here. It’s my new favorite!

Ingredients:

2 medium, spotted bananas
1/4 cup vegetable or coconut oil
1/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup whole wheat or all-purpose flour
1 cup old fashioned oats
1/2 cup semi-sweet or dark chocolate chips

In a large bowl, mash the bananas with a fork or potato masher until the big chunks are gone. Add the brown sugar and mix until blended. Mix in the oil, egg, and vanilla. In a medium bowl, whisk together the salt, baking soda, flour, and oats. Next, add the dry ingredients to the banana mixture and stir until incorporated. Lastly, mix in the chocolate chips.

Put mixture into a greased 8×8 or 9×9 square pan and bake for about 20 minutes at 350 degrees. Once cooled, slice them into bars and enjoy!
